
I can't believe this..I haven't posted any cheesecake recipes on my blog till now. What kind of a bakelogger m I??
Let me redeem the situation by making, not a simple single chocolate cheesecake, but a whooper Double Chocolate Cheesecake.
The visual impact of this cake is very impressive and stunning, yet, it is one of the most simple dessert I've ever made. I urge you to use the best quality cheese for this cake, because it makes a load of a difference to the flavour, texture and taste of the cake.
I made this cheesecake to celebrate simple-baking's mention as Notable Newbie on the homepage of Blogadda, one of India's largest blog directory.
Double Chocolate Cheesecake
Adapted from The GoodFood Magazine, India, March'12
Ingredients:
300 grams cream cheese (Philadelphia or Zanetti, both are good)
200 grams Mascarpone cheese (I used Zanetti)
175 grams digestive biscuits
50 grams melted butter
300 grams milk chocolate, chopped coarsely
100 grams dark chocolate, chopped coarsely
Method:
Melt both chocolates, separately, by putting the chocolate in a heat proof bowl and then placing that bowl on a saucepan of simmering water. Let both chocolates cool to room temperature.
Mix the cream cheese with the mascarpone cheese. In another bowl, crush the biscuits and mix them with the butter. Press the biscuit mixture into the base of a 7 inch springform tin.
Fold the milk chocolate into the cream cheese mix and then stir in the dark chocolate so that it looks streaky. Spoon into the tin and level the top. Chill for at least 2 hours or overnight.

While I'm not a fan of chocolate cheesecake, I must admit yours looks very interesting. One that I wouldn't mind tasting!
