I m writing this post with teary eyes and red nose.....No don't jump to wrong conclusions, m not crying..worse..I have cold.
The yucky, terrible, ears blocked, nose choked, can't-understand-what-you-are-saying kinda cold.
I just want to take my aching body back to my bed and sleep for ever. But I cannot afford this kind of luxury. Hey remember I have two TWO two kids. Ok I know they are "my angels" and all, but at this moment I want quiet and sleep and a cup of hot steaming adraki chai and a slice of the almond crusted butter cake I made last week, which sadly, is all gone.
The cake was chosen for our blog hop at The Home Bakers' Club by Emily and you can find the detailed recipe for the cake at her blog Emily's Cooking Foray. THB was started by Joyce@ Kitchen Flavours and currently we are baking from "Coffee Cakes" by Lou Seibert Pappas and we will bake until every recipe in the book has been baked. You can join in anytime and everyone's welcome. Whether you are just starting out with baking or have been baking for many years, all levels are welcome.
According to the rules, only the host of the chosen bake is allowed to post the recipe. This month's host is Emily@Emily's Cooking Foray and you can find the recipe at her blog.
The texture of the cake is really fluffy even though there are no leavening agents used and with 340 grams of butter, it is really moist. We start by coating the sides of a bundt pan with toasted and sliced almonds.
Next step is creaming the butter and sugar. Although some of my fellow baking buddies reduced the amount of sugar, I went with the amount specified by Lou , which is 454 grams and the cake was perfect for our taste.
Added six eggs to the mixture.
Next comes the cake flour. However I didnt have any, so I made mine by mixing 300 grams all purpose flour and 70 grams cornflour.
The cake is baked at 150 degree Celsius for 1 hour and 10 minutes.
You can also make this cake in a loaf pan. Next time I'll try that.

ReplyDeleteI can relate and understand how you feel. Like you, I wish for a break too from all my daily chores and felt trapped with the house and kid(s) especially when I'm sick. I know it's difficult to rest well but we are all tough mothers and eventually "survive" - LOL!
Saw your THB post now and thinking of posting mine now...
I didn't reduce the amount of butter and sugar for my bake and bake mine in loaf. The taste is ok but the texture is rather disappointing for my bake :( Either a hit or miss...so so for me.

DeleteI think the fluffiness of the cake will depend a lot more on how you beat your butter and sugar, as there are no leavning agents involved. Plus baking it in a bundt tin also helps in circulating the heat in the middle.
oh yes, it's difficult to really have a good rest and quiet moments when you hv kids around. YOu still need to keep an eye on them even you think you are sleeping..haha! Sorry to hear about your cold, hope you will recover asap. how come you gals are posting it today? i still hvnt drafted mine yet..haaiz..somemore take my own sweet time doing blog visiting..i better do it soon!!

ReplyDeleteYour cake looks lovely, and am glad that yours turned out great! I'll try with a bundt pan the next time to see the difference when baked in a loaf pan. But one thing I need to add on are the almonds!

DeleteJust saw your post. Your fortress looks great :D. I added almond flour to the cake and that really helped in keeping the cake moist plus it enhanced the flavour. But you are right, next time I'll definitely use more almond flakes for crusting the cake.

Hi Anuja, I hope you're feeling better now! Do take care & yes, being a mom is 24 seven job, even we're sick! Toughest job ever! LOL Love the shape of your lovely cake with almond flakes. I've baked mine yesterday & it was BURNED!!! Dark brown & hardly can see any almonds! I've over looked & thought baking it at 180°C!! LOL Nevertheless it tasted delicious but mine it's not as fluffy as yours. May be I've used only plain flours & I've reduced the sugar to 180g & It's just nice. :)
