Oatmeal Cookies

Its cookie time!! I've been searching far and away for "the best" oatmeal cookie recipe. The few I've made earlier were either too soft or too chewy or too crispy..they were just not right. And then I decided to try the tried and tested old fashioned recipe (which for the same reason I havent tried coz its....old and everywhere :(..I wanted to try something new.) The day I made these, I accidentally stumbled upon this site and I was bowled over by this guy. He is a total oatmeal cookie maniac and he has got it in every flavour you desire. His recipes are sure going to be on my next cookies-to-do list.
Coming back to my oatmeal cookie recipe, it surely passed the muster at our household and I'll definitely be making more in future.

Oatmeal Cookie:
Ingredients:
1 cup (113 grams) walnuts or cashews, toasted and coarsely chopped
1 cup (113 grams) raisins or dark chocolate chips or white chocolate chips or any other dried berries you desire
3/4th cup (170 grams) unsalted butter, room temperature
1 cup (210 grams) light brown sugar
3 cups (260 grams) rolled oats (I use Quaker Oats)
3/4th cup (105 grams) all purpose flour
1 egg
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon powder
1 teaspoon vanilla extract

Preheat oven to 177 degree Celsius and line a baking sheet with parchment paper.
Beat butter and sugar until creamy and smooth, then add egg and vanilla extract and beat to incorporate.
In a separate bowl whisk together flour, salt, soda and cinnamon pwder. Add the flour mixture to the butter and egg mixture and beat to incorporate. Then stir in the chopped nuts, oats and raisins and mix everything together.
Use a large spoon (or an ice cream scoop) to make the balls of the dough and place it on the baking sheet about 1.5" or 2" apart.


Now press the balls slightly by your fingers to flatten them.


Bake for about 12 to 15 minutes or until the sides are golden brown in colour.








Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them on a wire rack to cool completely.
